As-Salaamu Alaykum,

Rice Krispie Chicken Strips: similar in style to southern fried only baked which means they are a little 'healthier'.

I made these for my 2 fussy eaters, one ate the chicken but left the potato whilst the other ate the potato but left the chicken! what they left me and 'the baby' who's nearly a toddler happily tucked into. Al hamdu lillah

The strips or 'goujons' are dipped, first in mayonnaise which keeps the chicken moist and also acts as an adhesive then in hand crushed rice krispies that soak up the lovely juices while still remaining krisp crisp, sounds deliciously simple right? it is.

Rice Krispie Chicken


Recipe  slightly adapted from Lisa Faulkner
Serves: 2 children (age 3-5) or 1 adult

Ingredients

1 large skinless and boneless Halal chicken breast fillet, cut into strips. (cut across width)
6 handfuls / approx 65 grams rice krispies
sunflower oil, for greasing 
mayonnaisee, for dipping
salt and ground black pepper

Method

  1. Pre-heat the oven to 200°C. Lightly grease a baking tray, set aside.
  2. Put the rice krispies into a medium size bowl with some salt and pepper and crumble with your fingers until lightly crushed, some cereal will turn to powder that's fine.
  3. Put the mayonnaise in a separate bowl and set both bowls on the counter, ready for dipping.
  4. Dip each strip of chicken first into the mayonnaise, shaking off any excess then dipping into the crushed cereal.
  5. Place coated chicken onto prepared baking tray and bake in oven for 35 minutes until golden, turning half way through.
