Cinnamon Biscuits / Cookies

Halal Home Cooking: Cinnamon Biscuits / Cookies
These are the type of biscuits /cookies you can't say no to.

Adapted from ginger snaps i simply replaced 1 teaspoon ginger with cinnamon.
Instead of baking straight on greased baking trays I greased and lined my baking trays with parchment which means the cookies spread less and end up being smaller, that or i measured the ingredients incorrectly without realizing!

They still ended up crunchy, ever so moreish.

You even have the option if you feel like it (have enough butter) to go and sandwich these cookies with some cinnamon spiced butter cream.

Tip: I discovered the biscuit dough can be handled, it's a bit sticky but not overly so, wet your hands a little and roll heaped teaspoons (i weighed one it was about 15 grams) into balls before placing on lined baking sheet.

Ginger Biscuits / Ginger Snaps / Ginger Nuts

I originally thought Ginger Biscuits also known as Ginger Snaps and Ginger Nuts were a British speciality but it seems these biscuits are popular in many countries like gingerbread, all of course with varying recipes including different spices and sometimes with the addition of molasses and the common ingredient being? yep, Ginger.

Eid Mubarak & Makrout

As-Salaamu Alaykum & Eid Mubarak to all my muslim readers

Eid al fitr is a day that comes directly after the month of Ramadan (the month of fasting) where Muslims all over the world celebrate, perform a special prayer, give gifts (especially to children) and....... EAT during the day alhamdulillah

It's traditional in most families to bake sweets in preparation for EID and i had planned on making several (not that they are needed) but i have several valid excuses but the main reasons are my children are recovering from a bout of summer cold and are extra needy also my husband request i make his good old favourite Makrout but after feedback earlier in the month from him and indirectly from his friends that Makrout need to be made with extra coarse semolina instead of coarse. I listened and complied to the requirements and i have to say it does make a difference to the texture you get a more granular hard exterior with a soft, sweet, succulent centre.
Also instead of making syrup to soak the makrout in i used honey which makes them, erm healthier! (well that's if you ignore the fact most honey bees are fed sugar these days)

I didn't make it to Maryam's virtual EID Party but you should hop along there now and check out what everyone brought along.

P.S. Please ignore the crack in the container i quickly took the photo before realising. Plus i can't bear to throw away things that are still usable but imperfect.

Ghoriba cookies are popular across all of the Arabic speaking countries including Algeria which is where this recipe originates from, although similar versions can be found in neighbouring Morocco.

The fine semolina gives these cookies a slightly chewy and pleasant gritty texture and my addition of a nut on top before baking adds a bit of crunch.

Free From Friday - Gluten, Dairy & Egg Free Gingerbread Biscuits
